Hey Grandpa, What’s for Supper? – Busy Day Potatoes

D0C34E22-BEF2-4BA1-B1AF-681F494F34F6Here’s a side dish that is easy to put together, although it does bake for an hour so takes a little planning.  It makes a lot so either make it when you have a crowd to feed or divide it out into smaller dishes and freeze some for later.  This is another one of the “beach” recipes. Hmm, it’s starting to sound like all we did was eat! Really, we went to the beach, the pool and shopping too!  LOL

Busy Day Potatoes

2 lbs. frozen hash brown potatoes

8 oz. sour cream

1 c. cream of chicken soup – or use 1 can

1 c. Durkee French fried onion rings 

8 oz. cheddar cheese, shredded

¼ c. butter

Mix hash browns, sour cream, cream of chicken soup, ½ c. onion rings and cheddar cheese.  Place mixture into a buttered baking dish. Melt butter and drizzle over the top of the mixture.  Place the remaining onion rings on top. Bake at 350 degrees for 1 hour.
